GI DIET - SMOKED SALMON AND COTTAGE CHEESE SANDWICH



This low GI recipe is a filling and healthy snack.

Serves 1

Ingredients

2 slices wholegrain bread
Scraping butter or low fat spread
1/2 little gem lettuce
Small handful of rocket
75 g / 3 oz low fat soft cheese or cottage cheese
1/4 red onion, finely sliced
25 g / 1 oz thinly sliced smoked salmon
1 tablespoon capers
Pepper

Method

Spread both slices of bread with a little butter or low fat spread.  Top one slice with lettuce, rocket, cheese, red onion, smoked salmon and capers, seasoning with pepper as you layer.  Finish with the final slice of bread.
